Lentils with potatoes and leaks

  • 1 1/2 cup red lentils
  • 2-3 leaks cut in cm long pieces
  • 4-5 medium waxy potatoes, diced
  • 1 1/2 cup milk
  • 3 cups broth
  • ~1/3 cup cream
  • 1 tsp cider vinegar
  • 2 tbsp dijon mustard
  1. Melt butter and sweat the leaks for about 10min on medium low
  2. Add lentils, potatoes, milk and bring to a boil
  3. Add enough broth ~to cover everything
  4. Simmer 25 minutes uncovered, adding broth as necessary
  5. Add  cream and simmer for ~5-10min
  6. Add vinegar, simmer for 1 min
  7. Add mustard, salt and pepper and stir well
